Kimchi Smoke BBQ Shack

This place may be small but the flavors and quality are out of this world! Chef Rob and his team are putting out dynamite dishes packed with flavor and unusual combinations. Everything was topnotch and would 10000% order again we got the empanadas, Korean bbq ribs, pastrami, blue cheese burger, and the hotdogs. Everything was chef's kiss delicious. So good we even took a bottle of sauce home with us. Can't wait to visit again!

The truck was at the Paramus Food Truck Festival over the weekend. Hubby's cousin is a picky eater, but he loved the Brisket Sandwich. Which says a lot :) I got the Corn Bread and Carolina Bowl. I loved the Carolina Bowl, meaty, and the slaw was delicious, and I'm not a slaw person. My order was to go, so I ate it later and it was delicious. I will have to try it freshly made in the brick and mortar location. The Corn Bread was too dry for my taste, I had to warm it up and smothered it with butter to eat it... Will have to go to the brick and mortar location soon!

We decided to give this place a try and do not regret it! We got the bowl that had kimchi in it which added the extra flavor. We ordered mac and cheese for the little one. The sammie we ordered, the meat was soft and very delicious. There was a good amount of seats to dine in and plenty of parking in front. Definitely give it a try!

We drove more than 35 mts to get there and find that even if we arrive almost an hour before they close, they didn't allow us to sit and dine in but told us we need to order and go. We found ourselves having dinner right outside the store, sitting in a table of a next door restaurant , chilling cause it was kindnof cold outside. Eventually was much better that going back home and "enjoy" our cold food, as.when we opened the bag , the order was wrong and they didn't put one of the orders. We saw a couple that came in to order and they were told they were not taking more orders, even if not yet time for them to close. The item that wasn't in the original order appears ordered later as we needed to get back in and remind the lady there that se forgot to add the chicken.

The ordering process was easy and quickly confirmed. The meal would be ready in like roughly 20 minutes. When I arrived to pick up my food, I arrived a little after the estimated ready time. The restaurant itself was cute and the person working at the front was very sweet. My family ordered a brisket box with the slaw and collard greens, a Carolina bowl with sauces on the side, the pork belly and an order of corn bread. I have to start by saying all the meat was cold. I live less than ten minutes away from the restaurant but the meats were cold when we ate. We unpacked everything shortly after I arrived home. The brisket itself was very soft and well seasoned. The slaw is sort of an Asian fusion which I found a nice alternative to traditional mayo based slaw. My husband was not a fan. The greens were braised well but it was also cold. This was also fusion and had a slight spicy note at the end. It was too salty for us. The Carolina bowl was tasty all around. The pork was very tender with no gamey smell. The portion was generous and satisfying. The highlight of the meal was the pork belly. At first glance it looked dried out but it wasn’t at all. It had a sort of dehydrated texture on the outside but it was moist on the inside. The sauce had the perfect amount of salt, spice and sweetness. It’s very addicting. Highly recommend! Last but not least was the cornbread. I loved the flavor but the texture was a no go. It was so incredibly crumbly it was annoying to eat. Cornbread is always crumbly but this was like level 100 crumbly. You have to use a spoon to eat it. For the price I paid ($70), I was left feeling unsatisfied with what we got. However, if you’re a fan of BBQ, I do think it’s worth checking out at least once.

I have been looking forward to trying this for years now and glad I finally went. The pork belly bao buns and kimchi brisket tacos were very good. The nachos with fries, seasoning, kimchi, pulled pork and cheese were also very tasty. Cornbread was good but a little dry. I will be back. This place is very casual and several components are self-serve with only a few employees and a handful of tables.
